    Ventilated proving cabinets for controlling the programmed proving process are ideal for all medium and small leavened products for bakery and confectionery. These cabinets work in a temperature range of -10°C to +40°C and are equipped with a specific air circulation system for proving stops. Ristoattrezzature's professional proving cabinets are made entirely of AISI 304 stainless steel and have rounded edges and feet, also in stainless steel, adjustable in height (130-200 mm) to facilitate cleaning and sanitising operations.

    The structure of the cabinets, with internal lighting, is designed to accommodate 60x40 and 60x80 cm euronorm tra ys and 35 mm pitch rail supports, which can be easily removed. The ecological water-expanded polyurethane insulation is 60 mm, the self-closing blind doors with easily replaceable magnetic gaskets and the active humidity control up to 95% (Fermalievita FL) give you the best control over how, when and how long the dough is left to rise.
