In fact, not all restaurants have access to a classic charcoal grill, yet they do not want to give up the goodness of grilling and the unique flavour of this type of preparation.
The fry top consists of a stainless steel plate on which meat, fish and vegetables can be placed for perfect roasting or grilling, even of several foods at the same time.
The fry top is in fact divided into several heat points, which can be adjusted by means of the external knobs that allow you to control the temperature of the individual burners located under the steel plate.

The griddle can also be chrome-plated, suitable in this case for more delicate cooking of vegetables and fish.
In addition to the type of griddle, the depth of the fry top can change, with models up to 90 cm, which are more suitable for those with a larger number of customers in the room and therefore need to cook several foods at the same time.
Underneath the top there is a drawer that collects dripping fat, oil and residues. This is very useful to keep the kitchen clean at all times and to avoid spills and splatters, typical of pan cooking.
This Fry Top model is gas-powered and can therefore be connected to the city's natural gas network or to a cooking gas cylinder.
In the latter case they are particularly useful for travelling kitchens, street food, fairs and events.
The fry top can be single or integrated into a kitchen cabinet. In some models the griddle is divided into two types, with a smooth and a ribbed part, to make each preparation unique.

The surface of the Fry Top can be cleaned with a damp cloth or sponge. If there are any incrustations, which are frequent when grilling, e.g. chicken or fish skin, they can be removed with a rubberised spatula, which does not affect the non-stick properties of the griddle. Residues can also be removed with classic dishwashing detergent. Always remember to clean the griddle when cold and with the machine switched off.
