    Bain-marie cooking is in fact suitable for cooking food while retaining the natural liquids and juices inside: in the case of red meat, for example, bain-marie cooking at 60° for a couple of hours allows the meat to cook without losing its juices, and therefore all its flavour.

    The bain-marie cooking technique is also used in professional pastry shops for the preparation of creams such as zabaglione, for example.

    Electric bain-marie, types and characteristics

    In professional electric bain-marie machines, the water is heated and maintained at temperature by means of electricity. You can choose between bain-marie equipment

    • counter-top, with one or more cooking tanks;
    • cabinet-mounted, with a compartment below the cooking tanks.

    The material used is stainless steel, which is durable and resistant to scratches, oxidation and rust.

    Electric bain-marie are further distinguished by the type of voltage, single-phase - 230 V or three-phase - 400 V. The heating elements are armoured, positioned outside the tanks.

    Temperature regulation is manual, by means of a thermostat, which allows you to select the ideal temperature for bringing the water to the boil and cooking food through the heat that the water gives off.

    Bain-marie cooking is slow cooking, so it takes longer to cook food. With slow cooking, however, you can better preserve the organoleptic properties of food for a more intense flavour.
